Bridge color

A new bridge would be near black or a very dark brown, with new creosote.  As the bridge got older it would fade to a brown  and eventually a grey color.  Some sort of brown would probably be about right.

Stain before building

Usually it's better to stain / paint the wood before you glue it together, as the dried glue blocks the stain from penetrating the wood.

You can still go ahead and stain it with a wash of rubbing alcohol and india ink, though since its already glued, a darker painting of slightly-diluted acrylic black would give the creosote appearance and it'd be easier to touch up around the glue.

If a lot of glue is showing then you might want to spray with Dullcote or a flat primer to remove the shine the dried glue leaves, and then paint / weather.
