Were the 4750 style covered hoppers used to ship wheat?

Yes

The 4750cf size was designed for wheat and is a tad big for corn (depending on moisture content).  Pullman used to make 4427cf hoppers for corn and 4740cf hoppers for wheat, etc.  In 1972 Pullman said the heck with that and started selling 4750s for both.

A quick way to check if a car is for grain is to look at the rooftop hatches. Grain cars have trough hatches whereas other use cars will have circular hatches.

It's ok for a quick rule of thumb, but not 100% or even 90% accurate.

I've seen some grain company marked cars with round hatches (although admittedly an outlier), and trough hatch cars used for potash, fertilizers, and other dry bulk chemicals (in some cases older cars that were previously in grain service but downgraded or sold off to secondhand owners, but also quite often in non-grain service from day 1).
