Having just watched Joe Fugate's video on zip ballasting I'd love to give it a try.  The Proses ballast spreader in HO has what appears to be a shut-off feature that looks like it'd be very handy when it comes to ballasting around a turnout, but that same feature isn't on the N scale spreader.

I'm wondering what tips N scalers have for ease in ballasting?

Without a shut off feature

What you do with the Proses ballast spreaders that don't have a shut off is you just fill the bin part way full. As for the HO spreader with the shutoff feature, it's kind of a gimmick because grains get stuck in the door making it really tough to close, or you get confused as to which way is open and just make a big mess. It only sort of works -- it's easier on that one to just fill the bin partway full as well.
